How to Wow Your Guests with a Perfect Pumpkin Pie

As with any recipe - from scratch is the best so I will go over instruction on how prepare fresh mashed pumpkin.

How To Pick A Pumpkin For Your Pie
Make a trip out of your pumpkin picking with your family. Go to your local pumpkin patch and while the kids pick out their perfect pumpkin for carving you can scour the fields for a 'pie pumpkin'. You are actually going to want to look for a pumpkin that is smaller, heavier and slightly lighter in color. These pumpkins have the most and best 'meat' in them.

How To Prepare Your Pumpkin Filling
Preheat your oven to 400 degrees F.
Cut out top of your pumpkin and clean out all seeds and strings from inside (my neice calls it 'Pumpkin Brains'). Slice the pumpkin vertically into 2 or 3 inch wide strips. Place strips onto a baking sheet.
Bake in preheated oven for about 1 hour. Once done, scrape the pumpkin from the skins, then beat with a mixer or a food processor until smooth.

* TIP Save your pumpkin seeds for roasting and freeze any pumpkin mixture that you won't be baking into a pie. There are many other recipes to try with the mashed pumpkin and it will keep for a very long time.

Grandma's Pumpkin Pie
Ingredients

  • 2/3 cup of sugar
  • 1 tablespoon flour
  • 1/2 tsp of salt
  • 1 tsp cinnamon
  • 1/3 cup of molassas (Use Brier Rabbit - it's harder to find but makes the recipe taste the best)
  • 2 cups mashed pumpkin
  • 3 eggs beaten
  • 1/8 tsp cloves
  • 1 cup undiluted evaporated milk (or light cream)
  • 9" pie pastry

  • 2/3 cup of sugar

  • 2 cups mashed pumpkin

Mix 1st 6 ingredients with a whisk or beater.
Add molasses, pumpkin, eggs, milk or cream.
Mix together well in a beater.
Bake for 30-35 minutes. To test - stick a butter knife about 2 inches in from the crust, if it comes out clean the pie is ready.

Homemade Whipped Cream
Ingredients

  • whipping cream (however much desired to make)
  • sugar

  • whipping cream (however much desired to make)
  • sugar

 

beat until peaks form when you raise the beater. Add sugar by the tbsp to taste Add touch of vanilla
**be very careful during the beating process, there is a fine line between whipped cream and butter**
