I just have to share. A recipe from my son and his girl. They're vegan, but this can go either way.
3 "heads" broccoli, cut up into *small* bite-sized pieces (just the florets).
3 shallots, cut up into small pieces.
1 cup mayo - either regular or Veganaise (not bad, really. I've had it both ways and couldn't tell the difference).
1 Tablespoon apple cider vinegar.
1/4 cup sugar (less, if desired).
1 package sliced fresh mushrooms, cut up into small pieces.
1 small package sunflower seed kernels.
1/2 cup raisins.
1/2 cup dried cranberries.
1 bottle bacon bits (tall, slim bottle you can find in the salad dressing aisle).
Mix it all together. Chill and serve. This is "OMG" good. And good for you.
