Healing Soup Recipe

If anyone would like to try my soup - I call it just throw it all together healing soup for the soul!

In some olive oil saute together a couple of chopped onions, chopped garlic, chopped carrots, chopped celery, and cut up mushrooms (try to put in a variety of these mushrooms, especially the Shitake mushrooms.) Mushrooms are important for they provide the beta-glucan that boosts the immune system.

When veggies are soften, then throw in some kale, or escarole. I prefer kale because of the calcium content for my bones.
 
Then a cup of barley ... so good for a lot of things
 
Then a cup of lentils -- Dr. Oz highly recommends lentils for overall health.
 
A couple cans of cannelini beans - or kidney beans, black beans, or any beans you like. I also throw in those garbanzo beans because I simply like them.
 
I also throw in two larger cans of diced tomatoes. Fresh is good but when you're in a hurry, keeping the canned variety on hand is good.
 
Cooked tomatoes provides all that lycopene...good for the hubby, the boyfriend, and ourselves as it protects us from the sun.
 
For the adventurous I put in a large teaspoon of Miso paste (be careful because it does have sodium) but it also provides that enzymatic action that aids in digestion... and can be one of the ingredients that provides that outer glow.

Sounds like a lot of work, but actually it isn't because making al of this and freezing it in smaller containers will have you looking forward to having this soup throughout the week.

That sounds really good! I love making big batches of soup in the winter and freezing some for quick dinners later.

That sounds tasty.  Similar to my all-but-the-kitchen-sink soup, but yours sounds much more planned out from a health perspective.  I'll have to give it a try when the weather cools off.  Not big on soup during the summer months.
