DD and I aren't big fans of zucchini, but I made this recipe last night and we both had seconds!  I served it with rice pilaf.  I didn't have any onion, so I made it without that, but otherwise I basically followed the recipe.  We had some fresh zucchini and tomatoes to use up, and this was pretty tasty.  Thought I'd pass it along.  It was also easy to make, and DD was able to slice the zucchini for me.

I love the internet!  I searched for the key ingredients I wanted to use, and up pop all sorts of interesting recipes to try. smile

I just bought a bunch of Organic Zucchini at the Farmers Market - now I know what I am going to make with it! Thanks for sharing!  yippee

I make oven fried zucchini (just dip it in egg, oil and breadcrumbs and bake and then also add on some mozzarella towards the end).

So good!

I also just chop it up in sauce, onion and garlic and let it saute or bake in my baking dish with lid in the oven.

I decided that steamed and mashed squash didn't sound good at this time of year, so I decided to try slicing the squash and sautéing it instead.  We'll see how it turns out, since I kept everything else the same.   Actually, I used a lot more than just 2 T. of feta and a third roma.  (I really never can follow a recipe!)

Zucchini is great as part of a vegetarian lasagna.  There' s a good recipe by Giada de Laurentis on the Food Network website.   big grin

I made it in the oven again last night with sauce, onion and garlic.  This time I sprinkled mozzarella cheese on the top though. SO GOOD!

I am going to try a spaghetti squash this weekend (not from our garden though).

We've also been eating fresh cucumbers from our garden sliced and dipped in french dressing. Yummy!
