We will be spending a week at the beach in August.
The place we\'ve rented has a complete kitchen, which means I can save lots of $$ by \"eating in\".  The trouble is, I absolutely LOVE eating breakfast out (and by \"out\" I mean an outdoor cafe!), so most of the meals will be lunches/ lite dinners.

Any suggestions of quick meals I can make at the beach?  Especially helpful would be foods I can drag out onto the beach, because I know it will be difficult to get people to walk INTO the house and eat!

veggies and dip, fruit salad, peanut butter sandwiches, tuna salad -- just make sure you have a good cooler!  Also, cold pasta salad can work well.  Bread and cheese, grapes, wrap-style sandwiches.

I second the good cooler and blue ice suggestion  In addition to what Tricia suggested, what about tortilla wraps?  You can get creative with how you fill them and slice them into one inch slices for easy finger food.

Edited to say that maybe that\'s what Tricia meant by wrap-style sandwiches.  :o

I love pitas with hummus, too.

We rent ahouse every year with my family, and we all have different meal \"duties\".

This year at the beach, my BIL made these absolutley to die for breakfast casseroles! They were so awesome we even ate it cold!

It was basically eggs, evaporated milk, cheese, and any veggies you like (onions, peppers, & mushrooms were awesome!) Baked at 350 about 45 minutes, or until done to your taste. He also made some with frozen hashbrown potatoes mixed in that were soooo good!

We also made a lot of sandwiches, and wraps, packed them in the cooler, and took them down to the beach with us.  

I learned the hard way, make your food in advance, and bring a jug of fresh water to rinse your hands, sand does not taste good added in to any sandwich!  Wink

We cooked out on the grill alot for dinner. Depending on where you are going, you may be able to get some great deals on seafood. We had Salmon, Lobster, Steak, Crab, and Shrimp Pasta on different family members \"Dinner Duty\". They were all easy, and relatively inexpensive meals  - for a group of 13!!!! If you want any specific recipes, let me know.
