Title: Favorite recipes - summer sharing

I've been trying new recipes and hope to do more of that this summer.  If you have a favorite you'd like to share let's start a thread here for that.

This is a great whole wheat pancake recipe (http://news.softpedia.com/news/Healthy-Sweets-Whole-Wheat-Cinnamon-Pancakes-102293.shtml) with yogurt in it - light and fluffy and much healthier than plain white flour pancakes. :thumb:  I like to add blueberries to mine.

I made this hummus recipe (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=85813), minus the lemon juice (didn't have any on hand).  Turned out delicious!

And then there's chocolate mousse made with chocolate chips and tofu!  This is one I loved - can't find it online like I made it so here it is:

1 10.5 oz. pkg. silken lite tofu (I actually used regular tofu)
3/4 c. chocolate chips (choose dairy free for a vegan option)
3 tsp. vanilla

Blend tofu in food processor until smooth.  Melt chocolate in microwave or over double-boiler.  Blend chocolate and vanilla with tofu until no white is visible.  Spoon evenly into serving dishes and chill for at least one hour.

We had it with whipped cream and fresh berries.  Super easy and delicious.  :diva:

I made cupcakes last night and tried a new to me glaze recipe plus non-dairy chocolate chips (which were delicious, by the way!).  The glaze was chocolate chips, a little bit of Karo syrup, a coupe of tablespoons of butter and little bit of vanilla.  Tasted like glaze on a doughnut only way better! :D

Tonight I'm trying this chocolate frozen yogurt recipe (http://allrecipes.com/Recipe/Chocolate-Frozen-Yogurt/Detail.aspx) - we'll see how it turns out!

The yogurt was pretty good - we ate it all, so that says something. :)

I'm going to try and make DD some chocolate pudding pops from scratch today - and I have truffles to make too. 

All chocolate, all the time right now, lol!

--Edited to say the pudding tastes good after licking the spoon, so hopefully the pops will freeze up nicely!  And the truffles - vegan - are excellent.  I made them small so they're only about 25 calories each.  I made just half a batch and am giving some of them to our neighbors, too.

And the pudding pops turned out tasty, thankfully. :)

This isn't much of a recipe but was delicious nonetheless.  I oven roasted zucchini, red potatoes, onion, bell pepper and carrot.  I have an olive oil sprayer so I was able to use a small amount of oil to keep it nice and light, and I seasoned it with a Trader Joe's salt-free seasoning blend.  So yummy!

I made some homemade vanilla ice cream with nonfat milk and half and half, and some chocolate chip cookies, to make sandwiches to take to a fireworks gathering tonight.  The ice cream is more like ice milk but tastes really good.

I think I'm all dessert-ed out, finally.  I ate a big, rich dinner/dessert last night and actually ended up with a really bad stomach ache that kept me up half the night.  So I'm moving on to much lighter fare now.

Any delicious LIGHT, healthy suggestions?

I made some of these today - baked parmesan crisps (http://www.foodnetwork.com/recipes/alton-brown/parmesan-crisps-recipe/index.html).  Could not be ANY easier, and very yummy!

Last night I made a sauce with sauteed garlic, Italian crushed tomatoes (1 large can), white beans (1 regular size can) and fresh baby spinach, then poured it over whole wheat spaghetti, topped with a bit of fresh Parmesan cheese and crushed chipotle pepper flakes.  Delicious!

Last night I made felafel, tahini lemon sauce and chilled berry soup (dessert), all from the Moosewood Kitchen cookbook.  Made some fresh hummus, too.

No new recipes tonight - but we're using the grill for veggie burgers, corn on the cob and roasted vegetables.  Yummmmm....

A friend shared an easy way to make jam so I may have to try my hand at that soon.  DD can make popovers - fresh jam and warm popovers sounds heavenly!

Do NOT make these unless you want to consume your fat allowance for the day in one or two cookies, but they are so yummy:

I suggest cutting the cookies into quarters or thirds, or just making them much, much smaller to begin with.  The butter content is over the top!

Couple more...

I made these savory breakfast muffins (http://www.eatingwell.com/recipes/savory_breakfast_muffin.html), substituting vegetarian "bacon" for the real thing and using 1/2 c cheddar plus 1/4 c Parmesan cheese.  These turned out pretty tasty.

I'm trying quinoa tabbouleh tonight - we'll see how it turned out in a little bit!
